Carrot and Orange Juice

Fresh carrot juice cut with orange and sharpened with ginger, made in a blender and strained so no juicer is required. It separates within an hour, so it is made to be drunk right away.

Ingredients

Method

  1. Scrub the carrots hard under running water rather than peeling them; most of the color and flavor sits just under the skin. Chop them small so the blender can handle them.
  2. Blend the carrots with the orange juice, the fresh ginger, and the cold water on high for 90 seconds, until the mixture is as smooth as the machine can get it.
  3. Set a fine-mesh sieve or a nut-milk bag over a bowl and pour the puree through, pressing and twisting hard to force out every drop. Expect to work at it for a few minutes.
  4. Stir the fresh lemon juice into the strained juice; it keeps the color bright orange instead of dull and lifts the sweetness.
  5. Pour over the ice cubes and drink immediately. Fresh juice separates into layers and loses vitamin C within a couple of hours, so it does not keep well.

Notes

  • The strained pulp is good stirred into muffin batter or a pot of soup rather than thrown away.
  • With a juicer, run the carrots, oranges, and ginger through and skip the water and straining entirely.
